Gorditas Mexicanas

1lb. Masa (dough) for Tortillas

3 Ancho Chili Pods

½ Cup of Queso Fresco Casero El Mexicano (skim milk cheese)

15 oz. (1 can) of Refried Beans El Mexicano

2 cups of Pork Chorizo El Mexicano

2 tbsp. Extra Virgin Olive Oil or Lard El Mexicano

½ tsp. Dried Oregano  


To Prepare:

Devein and lightly toast chilis, soak in water. Mix the masa (dough) and half of ¼ cup of the shredded cheese. Form the gorditas. Fry the gorditas (dough) in oil or lard, until they are cooked thru, drain excess oil/lard. Remove the chorizo casing and cook. Once the chorizo is cooked, remove from the pan and set aside. In the same pan you cooked the chorizo in; add the beans with the oregano, mix.  Once the beans are heated, remove from heat. Assemble your gorditas by stuffing the inside with beans, and then add the cooked chorizo and cheese.
