Brunch Tostadas

Hey guys! Did you know that the most important meal of the day is breakfast? Breakfast provides you with the energy and nutrients to get you through the day productively and it also helps increase concentration to help you focus at school or work. Studies show that breakfast can be important in maintaining a healthy body weight.

This is why I try to never miss breakfast. Personally I like quick and easy meals that keep me satisfied like this recipe. It may seem complicated but in reality it takes you no longer than 20mins to prepare everything 🙂 so no excuses!

When it comes to tostadas, there is something about those crunchy delicious things that make me have more than one all the time. So in order to avoid having to eat more than one, I make sure to load them up so I can enjoy all the flavors at once..yum! This recipe was inspired from the bean, cheese and crema tostadas I use to eat when I was a little girl. They were so delicious and so easy to prepare. This one is similar but more “grown up” I would say 😉 making sure that when preparing meals we try to get the most out of them. This one for example provides a good amount protein, fiber, healthy fats and omegas.

Serves 4

Ingredients:

4 Baked Tostadas

4 Eggs, organic

1 can El Mexicano® Pinto beans

1 cup Salsa Verde El Mexicano®

5 oz Queso Casero® El Mexicano®, crumbled

2 ripe Avocados

1/2 Onion, chopped

1 Serrano pepper, chopped

1 clove Garlic, diced

1 cup fresh Cilantro, chopped

2 tbsps. Coconut Oil

Seasonings: Sea salt and black pepper

Preparation:

  1. Drain pinto beans, only leaving a little bit of the liquid for cooking.
  2. Heat coconut oil in a non stick skillet over medium heat. Add garlic, onions and serrano peppers. Cook until tender and pour beans into pan. Sauté beans for about 3-4mins and then smash so all the flavors mix well. Meanwhile, smash your avocados in a bowl and set aside.
  3. Heat oil in another non stick skillet over medium heat and add one egg at a time. Flip until “fried”
  4. Grab a tostada and spread smashed avocado, beans and layer with friend egg on top. garnish with cilantro, fresh crumbled queso Casero® and Salsa Verde. Repeat for the rest of the tostadas..serve and enjoy with some Crema Oaxaqueña or Mexicana ;P

PS: I like to use coconut oil because it is one of the best oils to use when cooking. Since it has a high fat content (healthy fat that is) it allows it to be highly resistant to oxidation at high heats since it has a high smoking point of 350°F.
