Chorizo & Eggs

(Serves: 4)


8 large eggs

1 package (9 oz) Beef or Pork Chorizo El Mexicano® 

butter or cooking oil

Preparation Method

1. Cook chorizo of your choice until almost cooked through. While the chorizo is cooking, beat the eggs together. Add the eggs to the chorizo and continue to cook, stirring and scrambling occasionally until eggs are cooked through. Serve with warm tortillas of choice.

Optional: Add diced onions and ½ cup shredded Queso Oaxaca to the beaten eggs before they are added to the chorizo. Finish as before. Serve with refried beans and tortillas.
