El Mexicano® Lettuce Tacos

(4-6 servings / Prep. time: 15 mins)


1 Butter Lettuce head, cleaned and leafed

1 pk (10 oz) El Mexicano® Longaniza

1/4 cup El Mexicano® Queso Casero®, crumbled

1/4 cup El Mexicano® Queso Cotija, grated

1 Large Sweet potato, peeled and finely diced

1/2 Large Onion, diced

2 tbsp. Cilantro, chopped

2 Tomatoes, diced

1 Avocado, diced

Preparation Method

1. In a skillet over medium heat cook your option of El Mexicano® Longaniza or Chorizo. Set aside.

2. Using the same skillet and any drippings from the Longaniza, cook the sweet potatoes until tender, add the diced onion and the longaniza back into the skillet and continue to cook for another 3–4 minutes.

3. Transfer onto a serving platter inside butter lettuce leafs topped with the El Mexicano® Queso Fresco Casero® and Queso Cotija, chopped cilantro, diced tomatoes and avocado and serve immediately.
