Mexican Street Corn with Cilantro lime butter

6 Corn ears, husks and silk removed
1/2 cup Cilantro
1/2 stick Butter, unsalted
2 tbsp. Lime juice, fresh
1/2 tbsp. Lime zest, finely grated
El Mexicano® Cotija cheese, grated, for sprinkling on top
El Mexicano® Crema Oaxaqueña
Paprika and sea salt to taste
1. Puree cilantro, butter, lime zest and juice, and a pinch of sea salt in a food processor.
2. Heat grill to medium-high. Brush corn with some of the cilantro butter, and season with sea salt. Grill corn, turning occasionally, until nicely charred and bright in color, 10 to 12 minutes. Sprinkle generously with grated El Mexicano® Cotija cheese and paprika to finish. For a creamier taste, brush corn with El Mexicano® Crema Oaxaqueña
3. Serve warm and enjoy!
