Mexican Street Corn Oven Baked Croquettes

Ingredients (Croquettes)
2 cups corn, off the cob
1/2 cup El Mexicano® Oaxaca Cheese, shredded
1/2 cup El Mexicano® Queso Fresco Casero®, crumbled
1/2 cup El Mexicano® Bread Crumbs
2 eggs
3 jalapenos, seeded and diced
3 tbsps. cilantro, chopped
1 tsp. chili powder
1 tsp. lime juice
1 clove garlic, minced
Salt and pepper to taste
Cooking spray
Ingredients (Sauce)
1/2 cup El Mexicano® Crema Mexicana
2 tbsps. Tapatio hot sauce
1 tsp. El Mexicano® Chipotle Pepper in Adobo Sauce, from the can
Salt and pepper to taste
Directions
1. Preheat oven to 425°F. Line a baking sheet with parchment paper. Set aside.
2. Combine ingredients for croquettes in a bowl. With a large cookie scoop, spoon large balls of croquette mixture onto pan. Lightly press down with back of spoon and spray with cooking oil. Place in oven for 10-15 minutes.
3. Meanwhile, combine ingredients for sauce in a bowl. Remove croquettes from oven and let cool slightly. Serve sauce on top of croquettes and garnish with more El Mexicano® Queso Fresco Casero® and cilantro.
