Mixed Berry & Yogurt Paletas

(Prep: 5 minutes / Yield: 4-6 pops)


Ingredients

3 cups cup plain low-fat blended Yogurt El Mexicano®

2 cups fresh or frozen berries of choice (blueberries, strawberries and/or raspberries)

Pure agave, honey, or sweetener of choice to taste

Optional: 1/4 tsp pure vanilla extract.

Non-dairy option: substitute yogurt for our delicious and refreshing Agua de Coco El Mexicano®

Special equipment: popsicle sticks and molds


Preparation Method

1. Blend the berries in a food processor or blender on high speed until nearly liquefied into a smoothie-like consistency.

2. Pour the thick berry liquid into a large bowl. Add the plain lowfat yogurt and very gently mix everything together. If you want a tie-dye, swirly look to your popsicles– do not fully blend the yogurt and berries so you can have the patches of white, red and blue showing. The mixture will be thick. Taste it and if you prefer it sweeter, you can add sweetener of choice.

3. Pour mixture evenly into each popsicle mold. You can add slices or whole berries to the mold as well if you want to add texture. If your popsicle mold has slots for sticks, you can insert them before freezing. Continue to freeze for an additional 3-5 hours or overnight.

4. Run popsicle molds under warm water to easily remove. Enjoy on a hot summer day!
