Red Chicken Enchiladas

(4-6 servings)


1 can (28 oz) El Mexicano® Enchilada Sauce

12 Corn tortillas (warmed)

2 cups Cooked shredded chicken or turkey

1 cup Finely chopped onion

1 cup Chopped Romaine lettuce

1 cup Chopped tomatoes

1 jar (15oz) El Mexicano® Crema Mexicana

1 pack (10oz) El Mexicano® Queso Fresco Casero

Preparation Method

1. Heat Enchilada Sauce according to instructions on can label.

2. Submerge one tortilla in the sauce until well coated.

3. Remove tortilla onto a flat surface, fill middle with chicken and onion, roll up and place fold down onto a warm serving platter. Repeat with the remaining tortillas.

4. To serve, top with lettuce, tomatoes, El Mexicano® Crema Mexicana and El Mexicano® Queso Fresco Casero.
