Requeson Ice Cream with Cajeta & Caramelized Peaches

 


Ingredients for the (Blender) Ice Cream

14 oz (1 tray pack) El Mexicano® Requeson

1 cup heavy whipping cream

2 tablespoons vanilla extract

3 tablespoons El Mexicano® Honey

1 tsp cinnamon powder or to taste

Ingredients for the Caramelized Peaches*

1 large peach*, sliced 

2 tablespoon ghee or butter

2 tablespoons brown sugar

a dash of vanilla extract

cinnamon powder

pecans, chopped

El Mexicano® Cajeta for topping


Preparation for the Ice Cream

1. Add all ingredients into a blender and blend until smooth.

2. Transfer to an airtight container and freeze for about 4-6 hours or until firm.

Preparation for the Caramelized Peaches

1. Heat a pan/skillet over medium-high heat. Melt ghee/butter and brown sugar. Add vanilla extract, chopped pecans and peach wedges and cook. Stirring occasionally, until caramelized, about 5 minutes.

2. Serve immediately with El Mexicano® Requeson ice cream, Cajeta drizzles and cinnamon powder sprinkled on top.

*Note: This recipe can also be prepared with caramelized apples. Simply substitute the peach for your choice of apple. We recommend honey crisp apples 😉
