Sopes El Mexicano®


 (4-6 servings)


1 pack Sopes

1 can (20oz) El Mexicano® Refried Beans

1 pack El Mexicano® Chorizo or Longaniza

1 Chicken breast, cooked and pulled

8 oz of Chili Lime Shrimp

1 jar (15oz) El Mexicano® Crema Oaxaqueña

5 oz El Mexicano® Queso Cotija, grated

5 oz El Mexicano® Queso Fresco Casero®, crumbled

1 can (7oz) El Mexicano® Salsa Casera

1 cup Onion, chopped

1 cup Tomatoes, diced

2 cups Lettuce, finely chopped

1/4 cup Extra Virgin Olive oil

Salt & Pepper


Preparation Method

1. Heat 2 tablespoons of oil in a large skillet.

2. Place 3-4 Sopes in skillet, fry on both sides, approximately for 2 minutes. Repeat with remaining sopes, adding oil as needed. Set aside and keep warm.

3. Heat the refried beans in a 2-qt sauce pan; add your choice of Beef or Pork Chorizo and heat thoroughly. Remove from heat.

4. Spoon bean and chorizo mixture onto each sope; follow with crumbled Cotija cheese or fresh Casero® cheese, lettuce, Crema Oaxaqueña®, and top with Salsa Casera or tomatoes.

Chef’s Tip: For spicier sopes, add sliced Jalapeños or Salsa Taquera El Mexicano®!
