El Mexicano® Halloween Cream of Pumpkin Soup

Usually around this time, temperatures drop and we begin to look for #comfortfood options, that keep us and our family warm, satisfied, and why not, healthy too! With the temperature fluctuations, our immune system is always in need of an extra boost, so why not use our food as medicine to help heal and satisfy us from the inside out.

I’ve been doing some recipe testing in the kitchen and some of those recipes have been fall inspired soups like this delicious and warming Cream of Pumpkin Soup using some of our authentic cremas and quesos.

This nutritious Halloween inspired Cream of Pumpkin Soup makes a tasty family meal any day of the week, especially when you are in need of an immunity boost or want something light and fulfilling. Plus, it’s a great way of incorporating more veggies into your kids’ diet. 😉

Get in the spirit of Halloween and have some fun with your kids by adding a spider’s web effect on top for decoration!

CREAM OF PUMPKIN SOUP

INGREDIENTS:

1 1/2 cups pumpkin, roasted or canned
2 cups butternut squash, chopped
1 cup carrots, chopped
1 orange or yellow bell pepper, sliced
2 cups chicken broth
1/2 cup El Mexicano® Crema Oaxaqueña
2 tbsps extra virgin olive oil
1 tbsp apple cider vinegar
1/2 tsp cumin
1/2 tsp smoked paprika
1/4 tsp garlic powder or 1 garlic clove, minced
1/2 tsp sea salt or to taste
black pepper to taste

TOPPINGS: Queso Casero®, Queso Oaxaca, Crema Oaxaqueña or Crema Mexicana

PREPARATION:

1. In a sauce pan, sauté butternut squash, carrots and bell peppers in clarified butter or cooking oil on medium-high heat until tender. Remove and place inside blender.

2. Add the rest of the ingredients into blender. Blend on high speed until smooth and creamy.

3. Serve with crumbled Queso Casero® , shredded Queso Oaxaca or a dollop of Crema Oaxaqueña (or a spider web affect as shown). Enjoy!

TIP: For a spider’s web effect on the soup, use a teaspoon of Crema Oaxaqueña or Crema Mexicana and make a spiral, and then drag it through with a toothpick starting each time from the center to the outside of the bowl.
