Simple Guacamole Tacos

This is a quick and easy recipe I don’t really have much to say about, except that it is one of my favorite go to when I don’t have a lot of time and I want something tasty and on the lighter side! 

Tacos and Guacamole is always a favorite around here. I don’t mean the store bought guacamole, I mean the  homemade creamy flavorful guacamole made with love! What I enjoy the most is preparing food at home because I get to control the portions of all the ingredients, especially salt…I prefer to use sea salt when cooking when possible. I love how creative you can get when it comes to making your own meals. There are so many different versions of guacamole and tacos that you can create but for today I am going to stick with the quick and easy traditional guacamole version but instead of tortilla chips how about we use the tortilla to stuff it with our guacamole and dress it up with some fresh queso fresco Casero®, salsa fresca and crema mexicana and toppings of your choice!

Simple Guacamole Tacos

Ingredients:

2 ripe Avocados, peeled and pitted

1 juice of Lime

1 Jalapeño pepper, seeds and chopped

1/4 cup red or white Onion, diced

1 bunch Cilantro, finely chopped

Salt and pepper to taste

Organic Corn Tortillas or Homemade Fresh Tortillas

Toppings:

Crema Mexicana

Crumbled queso fresco Casero®

Salsa fresca

Preparation:

  1. In a bowl, add avocado, lime juice, jalapeño pepper, onion and cilantro and smash avocado until smooth. Mix with the other ingredients and season with salt and pepper to taste.
  2. Heat a skillet on medium-high heat. Add tortillas and allow them to brown on the outside so they have a nice charred look. You can also put the tortilla over the open flame on your gas stove top, this is my preferred method 🙂
  3. Fill corn tortillas with guacamole, crumbled queso fresco and add additional toppings of your choice like crema mexicana, salsa fresca, corn, etc.
