Ultimate Grilled Queso

Sundays are one of my favorite days of the week because it is a day when we can relax with family and/or friends and of course enjoy a nice brunch! This weekend we were debating on going out to brunch or staying in but after coming up with this brilliant idea the family decided to stay in and enjoy my new creation…the Ultimate Grilled Queso! Not only is this a mouthful but it is super filling so it was a great idea to stay in and relax 🙂 I added all of our favorite ingredients into one sandwich! Usually its the typical huevos con chorizo with a side of beans and some fresh cheese for topping and maybe some slices of bread or tortillas right? Well what about adding them all into one big bite and savoring all flavors at once?!

The Ultimate Grilled “queso” Cheese sandwich is so easy to prepare and the most important part is that you can make this recipe while bonding with the family in the kitchen since there are so many parts to it 🙂 someone can help you prepare and season the chorizo, someone can prepare the beans and someone else can help you scramble the eggs or add the bread with cheese into the pannini press.

It may seem complicated but really it is easy as long as you have the ingredients. Hopefully this recipe will help you prepare this delicious sandwich when you are looking for some inspiration in the kitchen 🙂

Ultimate Grilled Cheese

Serves 4

8 slices of Bread ( your choice, I used Sourdough)

9oz Chorizo El Mexicano®

1 can Pinto Beans El Mexicano®

16 oz Queso Monterey El Mexicano®

15oz Crema Oaxaqueña

Avocado

Preparation:

  1. Add oil to a medium size skillet. Place chorizo in pan and allow it to cook for about 10 minutes. Set aside and drain. In the same skillet add in your beans and season to taste.
  2. Meanwhile, add sliced cheese to your bread slices and place on a panini press.
  3. Whisk eggs in a bowl, season to taste and add to a oiled pan. Once all ingredients are ready to be served, remove grilled cheese from panini press, and begin to fill with beans, egg, chorizo, avocado and crema Oaxaqueña. If you want to add some hot sauce I totally recommend it 😉
  4. Enjoy and make sure to eat slowly so you don’t fill up so fast!
